Spotlight on: White Asparagus Season
Brighter, milder spring days see the advent of the first asparagus of the season and here at Fischer’s, we’re diving right in
Austria’s delicate white variety of asparagus, known as spargel, is harvested at this time of year. We’re celebrating with a limited-edition menu that heroes this special ingredient, which is noted for its tenderness and sweet flavour. From 15th April, for brunch, lunch, supper and those moments in-between, diners can enjoy a selection of simple dishes, from white asparagus soup to an unusual white asparagus ice-cream.

Tell us a little about the significance of white asparagus in Austria?
White asparagus, known as spargel, holds a special place in Austrian culinary culture, especially in spring. Its significance goes beyond being just a vegetable – it marks a seasonal ritual and a celebration of regional agriculture. Traditionally, the season begins in April and ends on Midsummer’s Day. Harvesting is usually done by hand to prevent breakage of the delicate stalks.
What appeals to you about the flavour profile of white asparagus?
It has a profile that’s subtle, elegant and a little surprising: it can also be tender and sweeter than its green counterpart, which makes it perfect for traditional dishes, as well as an interesting component in something unexpected, such as the white asparagus ice cream with caramelised asparagus and raspberry coulis that we’ve created.
Where did your inspiration for the menu come from?
In Austria, white asparagus is not just a seasonal ingredient, rather it symbolises tradition. From mid-April to late June, it appears on menus across the country, marking the arrival of spring with a sense of ritual and anticipation. Its appearance isn’t trend-driven, it’s expected, celebrated and deeply rooted in Austrian dining culture. That’s why the idea of bringing it to Fischer’s is exciting. It reflects authenticity, seasonality and a genuine connection to the culinary rhythm of Austria. All of the dishes on our limited-edition menu aim to show off this special ingredient’s attributes. They are simple, elegant and well-executed.

What flavours pair best with white asparagus?
White asparagus has a delicate, slightly sweet, gently earthy profile, due to being grown underground and kept under cover away from sunlight, so it pairs best with flavours that enhance rather than overpower it. Natural partners include classic Hollandaise sauce, black forest ham and poached eggs.
Where in Austria is it grown?
Marchfeld and Styria are the main producers of white asparagus. In those regions, the vegetable is known as ‘white gold’. Freshness is key – a great white asparagus should have smooth, pale spears with no sign of wilting or withering.
